Bourbon BBQ Sauce

Ingredients (Produce 16 fl oz)

  • 1 ¼ cup tomato ketchup

  • ¼ cup apple cider vinegar
  • 1.2 fl oz Worcester sauce
  • Salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dry mustard
  • ¼ teaspoon cayenne pepper
  • 3 oz brown sugar
  • 1.5 oz molasses
  • 2 oz honey
  • 1 fl oz Bourbon
  • ½ tablespoon liquid smoke (optional)

Technique

  1. In a pot caramelize lightly brown sugar, molasse and honey
  2. Flambe the bourbon and remove from the fire to stop cooking the sweet part
  3. Add the vinegar and let cool off
  4. Once at room temperature, add the ketchup, Worcester sauce, spices and seasoning
  5. Add the liquid smoke if you want to use it.
  6. Reserve in the fridge for 24 hours before using, the flavours will settle together and will taste better

    Note: Do not boil the sugar mix after flambe the sauce base or you will lose the flavour of the Bourbon.
