Bourbon BBQ Sauce
Ingredients (Produce 16 fl oz)

1 ¼ cup tomato ketchup
- ¼ cup apple cider vinegar
- 1.2 fl oz Worcester sauce
- Salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dry mustard
- ¼ teaspoon cayenne pepper
- 3 oz brown sugar
- 1.5 oz molasses
- 2 oz honey
- 1 fl oz Bourbon
- ½ tablespoon liquid smoke (optional)
Technique
- In a pot caramelize lightly brown sugar, molasse and honey
- Flambe the bourbon and remove from the fire to stop cooking the sweet part
- Add the vinegar and let cool off
- Once at room temperature, add the ketchup, Worcester sauce, spices and seasoning
- Add the liquid smoke if you want to use it.
- Reserve in the fridge for 24 hours before using, the flavours will settle together and will taste better
Note: Do not boil the sugar mix after flambe the sauce base or you will lose the flavour of the Bourbon.
