Banana Bread


  • 3 or 4 ea        ripe bananas, smashed (depending the size)
  • 1/3 cup           melted butter
  • 1 cup              sugar
  • 1 ea                egg, beaten
  • 1 tsp              vanilla extract
  • 1 tsp               baking soda
  • 1 pinch           salt
  • 1 ½ cup          plain flour


  1. Preheat the oven to 350°F (175°C).
  2. With a wooden spoon, mix the melted butter into the fork mashed bananas in a large mixing-bowl
  3. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in
  4. Add the flour last, and mix till smooth
  5. Pour mixture into a buttered 4x8 inch loaf pan
  6. Bake for 1 hour, test with a knife or a skewer to ensure the cake is fully cooked inside
  7. Cool on a rack before enjoying
